Welcome to nishamadhulika.com We often need little amount of dahi (starter curd) for it. If you don’t have curd available at your home and if the market brought dahi is not useful in setting the curd then we can use lemon and green chilly to prepare the curd. So, let us see how to prepare starter curd with help of lemon and chilies. We have taken boiled milk in a vessel but for making starter curd we need to make it lukewarm. So, let us heat the milk same as we use for drinking and it can be touched with bare hands. Milk has turned little warm, turn off the flame now. Now, pour little amount of curd in different bowls for making the starter curd. We are using three different ingredients for making the starter curd. We have taken 2 green chilies with stalk. We need green chilies with stalk for making the starter curd. So, drop these chilies to the lukewarm milk. It is very important to have the stalk attached to the chilies for making the starter curd and make sure it is submerged completely in the milk. For the second starter curd we are using two red chilies with stalk. It is very important to have the stalk attached to the chilies for making the starter curd. Drop the chilies to the milk in second bowl and submerge them to milk completely. The third variety of starter curd is prepared using the lemon. So, we have 1 lemon, squeeze to take out the juice. Now add lemon juice to it. Cover the starter curd and keep them on a warm place. Keep them aside for 10 to 12 hours to set. 12 hours are complete; now let us check the starter curd. Starter curd prepared with green chilly, red chilly and lemon juice is ready. Take a spoonful of starter curd to check if set. Take a spoonful of starter curd prepared with red chilies as well to check. Making starter curd is little time consuming. It takes 10 to 12 hours for preparing the starter curd. Similarly, starter curd prepared with lemon curd is ready as well. Now we can use them for making the curd. The taste of this starter curd is not good as compared to dahi. These will only be used in making the curd. You can also use this for making kadhi as well. While making starter curd with chilies, keep the stalk attached as the enzymes present in the stalk helps convert the milk to curd, making them sour in taste. These starter curds are sour in taste and also set easily. So, these starter curds are not at all staled. Just they have little different taste then the curd. We will be using these curds for setting the curd. Now for making the curd, we have already boiled the milk. Make it little lukewarm as we this little warm milk for making the curd. The milk has now turned little warm, turn off the flame. We have taken casserole for the same, as curd sets quickly and easily in it. If you are using casseroles to set the curd during winters, then within 6 to 7 hours the curd will set nicely. But if you use regular vessel for setting the curd then it can be little time consuming. So, transfer the milk to the casserole. We have taken 1 liter milk, so divide it equally in both the casseroles. Now we will mix starter curd to it. Add 2 tsp starter curd prepared with chilies to this lukewarm milk and put the lid on and keep it aside for 6 to 7 hours to set. Likewise, add 2 tsp starter curd prepared with lemon to the milk. We are adding 2 tsp starter curd but you can also use 1 tsp. Adding 2 tsp of starter curd helps set the milk quickly. Use full cream milk for making the curd. Boil the milk until it simmers once and then let it simmer for 3 to 4 more minutes. If the milk is thick in consistency then the curd also sets with thick consistency. After boiling the milk, transfer it to any casserole used for setting the curd and then it cool down a little. Then use it to set the curd. You will be able to make perfect curd. After setting the curd, keep it inside the refrigerator else it can get sour taste. If you place the curd inside the refrigerator, it will get thicker and the taste will remain fresh. Now keep these casseroles aisde for 6 to 7 hours to set. After 6 to 7 hours, check the curds. Thick and dense curd is set and ready. We prepare two curds, one with the starter curd prepared with lemon and the other using starter curd prepared with chilies. Both the curds are now ready and set well. You can use a spoon to check the curd. Curd has come out really nice and also it tastes delicious on serving. Likewise check this curd as well. Curd is now ready to serve and taste super delicious. We used homemade starter curd for making curd at our home. You can very easily prepare starter curd using lemon, green chilly, red chilly or any of these available to make the curd.
